For long term health you need a "well balanced diet" but for short term survival, not so much. What is necessary is fuel to operate your body, energy, calories. Next in importance is protein, about 2 ounces a day but you can go quite a while without protein. A standard American diet is about 2,000 calories per day but people on weight loss diets last for a long time on 1,000 calories so for survival that should be enough. Rice has 1,600 calories per pound so 10 oz. of rice per day is all you need to eat and this would also provide 1 oz of protein per day, 19 pounds of rice will feed you for 30 days.
Potato chips have 2,450 calories per pound so you only need 6.5 oz. per day, 12 pound per month, but this only provides 1/2 oz. of protein per day. Lightest of all is cooking oil, 4,000 calories per pound so you only need 7.5 pounds of cooking oil to keep you going for 30 days but no protein so you must find a fish once in a while. So if you are able to gag down 10 tablespoons of cooking oil every day (you can space them out or just chug 5 ounces) then you have it made.
